  • 250 gr. from mushrooms
  • 1/2 onion
  • 1 leek
  • 200 gr. wheat flour
  • 1 liter of soy milk
  • 1/4 teaspoon nutmeg
  • 1 tablespoon fresh parsley
  • 3 tablespoons olive oil
  • Black pepper
  • Salt

For the batter:

  • 1/2 cup chickpea flour
  • 1 tablespoon of vinegar
  • 1 cup of water
  • Bread crumbs
  • Wheat flour
  • Vegetable oil for frying

Preparation of vegan mushroom croquettes

  1. To begin, you must clean the mushrooms and chop them into small pieces. Then wash the leek and cut the white part into pieces, as well as the onion once peeled.
  2. Add the olive oil to a high-walled skillet and when it warms, fry the onion and leek. When the onion is transparent, add the mushrooms and sauté them for about eight minutes.
  3. Once they are golden brown, add the parsley, nutmeg, salt and pepper and mix. Pour in the soy milk, flour and stir without stopping with a whisk to avoid lumps.
  4. When the mixture begins to detach from the sides of the pan, remove it from the heat. Pour the dough into a bowl, cover it with a plastic wrap and put it in the refrigerator for a few hours.
  5. When the dough is compacted, assemble the croquettes with your hands or a spoon, place them on a tray and refrigerate them again for half an hour.
  6. To prepare the batter, place the chickpea flour and vinegar in a bowl and add the water little by little until you get a mixture similar to that of the eggs when you beat them.
  7. Place the wheat flour and breadcrumbs in different bowls and pass the croquettes first through the flour, then through the chickpea flour mixture and finally through the breadcrumbs.
  8. Next, fry your vegan mushroom croquettes in hot oil and when they brown, take them out and drain them on absorbent paper. They will be delicious!
