Ingredients

  • 800 gr. veal cheeks
  • two onions
  • 1 leek
  • 200 ml. from cream
  • 200 ml. from Red wine
  • 300 ml. meat broth
  • 400 gr. of assorted mushrooms
  • 5 tablespoons of wheat flour
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • Black pepper
  • ¼ cup olive oil
  • Salt

Preparation of veal cheeks in mushroom sauce

  1. Before starting, the first thing you should do is marinate your cleaned cheeks with oregano, thyme, salt and freshly ground black pepper.
  2. Then, add the flour in a plastic kitchen bag, put the cheeks in it and shake them well so that they are covered.
  3. To prepare the vegetables that the recipe calls for, first peel the onions and chop them, it does not matter that they are large pieces since in the end you are going to crush them. Do the same with the leek after washing it. Clean the mushrooms well and laminate them.
  4. Add the olive oil in a high-walled casserole and when it is hot, put the cheeks to seal. Make them on both sides and remove them to the plate.
  5. Put the onion and leeks in the same oil to fry. Once they are transparent, add the mushrooms and cook for ten minutes over medium heat.
  6. Next, add the wine, the meat broth, the cheeks and cook with the pot covered for 75 minutes over low heat.
  7. Every so often you should stir them to prevent the bottom sauce from sticking. Do not let them dry either, if you need to add a little more broth, no problem.
  8. Once the meat is very soft, remove it to a plate, add the cream to the sauce, crush it with a mixer, correct the salt, add the cheeks again and cook another ten minutes.
  9. And now serve your veal cheeks in mushroom sauce accompanied with rice, mashed potatoes or the garnish of your choice. You’ll see how tasty they are!
