Ingredients

  • 1 kg. of fillets of tuna
  • 3 onions large
  • 8 tomatoes
  • 1/4 cup olive oil
  • 1 teaspoon of sugar
  • 3 sprigs of parsley
  • Black pepper
  • Salt

Preparation of tuna with tomato and onion

  1. If you are going to use fresh fish to prepare this dish, the first thing you should do is wash it, drain it, dry it with kitchen paper and season it. If it’s frozen, thaw it in the fridge from the day before.
  2. Add two tablespoons of olive oil to a skillet and when it is heated, seal the tuna fillets by frying it over medium high heat for two minutes per side. Set aside to a plate and reserve.
  3. Peel the onions, remove the first layer and cut into fine julienne strips. Wash the tomatoes, grate them and pass the pulp that you obtained through a strainer, so you will have a finer puree.
  4. In the same pan where you sealed the tuna you will prepare the sauce. To do this, add two tablespoons of olive oil if necessary. When it is hot, put the onions to poach with a little salt so that they cook faster.
  5. Once they start to change color, add the tomato puree, sugar, a bay leaf, salt and pepper and cook over low heat. Stir frequently to prevent sticking.
  6. When your tomato sauce is ready, after about fifteen minutes, add the tuna fillets and cook for another ten over low heat so that the flavors are well integrated.
