Madrid-style tripe with potatoes recipe

Pleasantly surprise your family by preparing a plate of Madrid-style tripe with potatoes and they will surely enjoy it very much.

Ingredients

  • 4 potatoes medium
  • 1.5 kg. corns
  • 500 gr. from nose
  • 75 gr. bacon
  • 3 handymen
  • 1 blood sausage
  • 1 chorizo
  • 1 tooth of Garlic
  • two onions
  • 1 tablespoon of flour
  • 1 tablespoon of paprika
  • 200 ml. Of olive oil
  • ½ chilli
  • 2 cloves
  • 1 tablespoon of paprika
  • Laurel
  • Parsley
  • Salt
  • Ground white pepper

Madrid-style tripe with potatoes recipe

  1. After having soaked the corns for a couple of hours, since they will be more tender that way, strain them and drain them. Now chop them up, as well as the nose, and put everything in a saucepan with the trotters. Fill with water and cook, on medium power, until it starts to boil. Discard the water and refill the saucepan.
  2. Now add the bacon, blood sausage and chorizo. Stir a little and let it boil for about 5 minutes. Then cut one of the onions into wedges, stick the cloves on it and put it in the saucepan, along with the garlic clove, peeled but not minced. Finally, salt and pepper to your liking and add a couple of bay leaves (or more if you feel like it). Cover and let everything cook for about two and a half hours. If you have a pressure cooker, it won’t take more than half an hour.
  3. When the time has passed, remove the onion, garlic clove and trotters. You are going to toss the garlic clove into a frying pan with a good jet of oil, along with the other onion that is well minced. Sauté everything for a few minutes and add the parsley along with the chilli and the tablespoon of paprika. Stir and fry everything for about 5 minutes.
  4. Then add the tablespoon of flour, stir again and cook for another five minutes.
  5. The final step remains, peel the potatoes, wash them well and cut them into small pieces.
  6. Put them in the saucepan, along with the sauce that you have prepared and that everything is done for about 15 – 20 minutes.
  7. Distribute the portions well and ready to enjoy this dish.
