  • 1 kg. beef tongue
  • two onions
  • 3 teeth of Garlic
  • 2 bay leaves
  • 1 leek
  • 1 Red pepper
  • 1 kg. from tomatoes mature
  • 1 teaspoon of sugar
  • 250 ml. meat broth
  • 1/4 cup olive oil
  • Black pepper
  • Salt to taste

Preparation of tongue in tomato sauce

  1. You are going to start by cooking the tongue to soften it. To do this, place it in a pot with cold water, an onion, the previously washed leek, a bay leaf, salt and cook it for about a couple of hours.
  2. Once the tongue is soft, drain it and remove the skin immediately and very carefully so as not to burn yourself. Afterwards, return it to the cooking broth so that it does not darken and leave it to rest.
  3. When cool, drain again, cut into slices and set aside.
  4. Then to make the sauce, chop the onion and garlic into small cubes after peeling them, also wash the tomatoes, the pepper and chop them after extracting the seeds.
  5. Heat the olive oil in a pot, sauté the onion with a pinch of salt and when it turns transparent, add the garlic and pepper to fry them for a minute.
  6. Next, add the chopped tomatoes, the sugar, the other bay leaf, the broth, salt and pepper to taste and cook for fifteen minutes.
  7. After that time, add the tongue slices and simmer them for ten minutes so that the flavors are well integrated.
