  • 1 language beef
  • two onions
  • 1/4 cup of raisins
  • 1 cup of almonds peeled
  • 2 tablespoons Butter
  • 1 tablespoon of olive oil
  • 2 tablespoons lemon juice
  • 500 ml. of tongue broth
  • 1 sprig of spearmint (optional)
  • 1 tablespoon of flour
  • Parsley leaves to decorate
  • Black pepper
  • Salt to taste

Preparation of tongue in almond sauce

  1. You are going to start by cooking the tongue in a pot with water, salt, an onion and the mint for two hours. You can substitute the mint for bay leaves, the important thing is that you use some seasoning to give it flavor.
  2. When the tongue is soft, take it out and with the help of a fork and a knife so as not to burn yourself, remove the skin. You should do it while it’s hot.
  3. Once it is tempered, cut it into thin slices and reserve it in the cooking broth so that it does not blacken.
  4. While the tongue is cooking, chop the remaining onion into small pieces after peeling it and run the almonds through a blender or a food processor to mash it.
  5. Add the butter and olive oil to a pot and as soon as they melt, add the onion and fry it. When it turns transparent, add the flour, stir to dissolve and cook for a couple of minutes so it is not raw.
  6. Next, pour in the broth little by little while stirring and then add the lemon juice, raisins, almonds, the tongue, season and cook for half an hour.
  7. After that time, your tongue in almond sauce will be ready to serve. Garnish with a few parsley leaves to give it a little color when serving. Take advantage!
