- 500 gr. squid
- 100 gr. from prawns peeled
- 3 onions
- 1 green pepper
- 1/2 zucchini
- 200 ml. sherry wine
- 1 tablespoon of sweet paprika
- Olive oil
Preparation of squid stuffed with onions
- We start by cleaning the squid, for this you will have to remove the legs and the feather. Then, wash them, remove eyes, mouth and ink, put the tentacles inside the squid and remove the skin. Reservation.
- Chop the squid legs, an onion, the bell pepper and the zucchini into very small squares. When you have it, sauté the vegetables in a pan with hot olive oil until they are tender. Then add the legs, the prawns, salt to taste and sauté over medium heat for ten minutes.
- Meanwhile, moisten a griddle with olive oil and when it is hot brown the squid with salt and pepper on all sides until they are done. Withdraw and reserve.
- Fill the squid with the sauce of prawns, vegetables and squid legs and close them with a kitchen toothpick so that the filling does not come out. Cut the remaining two onions into julienne strips.
- In a frying pan add a generous splash of olive oil and when it is hot add the onions and fry until they begin to brown. Then add the wine and the sweet paprika, mix and add the baby squid. Cover the pan and cook for fifteen minutes over medium heat and with the pan covered.
- When the time has elapsed, rectify the salt of the preparation, turn off the heat and let the squid stuffed with onions rest for a few minutes. Then serve immediately and enjoy, enjoy yourself!
