- 500 gr of squid
- 2 leeks
- 1 zucchini
- 2 teeth of Garlic
- 40 ml apple cider vinegar
- 1 packet of squid ink
- Olive oil
Preparation of the squid stewed in its ink
- The first thing you should do to cook the squid stewed in its ink is to wash, clean and cut the squid into slices. Remember that to clean the squid you must extract all the content inside. Don’t waste the squid legs, cut them into squares and use them too.
- Now peel, wash and chop the leeks in fine julienne strips and do the same with the zucchini. Wash and cut the garlic as well and reserve everything until use.
- In a frying pan, add a splash of oil and when it is hot, fry the leek and garlic until golden brown. Then add the zucchini chunks, a little salt and pepper and fry for 10 minutes over medium heat.
- Once the zucchini are tender, add the squid, ink packet, apple cider vinegar, and a cup of water. Let the preparation cook over medium heat with the pan covered.
