Ingredients

  • 3 lamb shoulders
  • 4 teeth of Garlic
  • two onions
  • 4 tomatoes
  • 1 leek
  • two carrots
  • 1 glass of red wine
  • 1/4 cup olive oil
  • 1/2 teaspoon ground thyme
  • 1 branch of rosemary
  • Black pepper to taste
  • Salt to taste

Preparation of shoulder of lamb stewed with vegetables

  1. To start, the first thing you are going to do is season the lamb and, if you have a large casserole, you can leave the shoulders whole, but cut them into pieces to fit. Reservation.
  2. Now wash the tomatoes and grate them. Then, peel the onions and garlic into cubes. Julienne the leek after washing and removing the first skin. Peel the carrots with a potato peeler and slice them.
  3. Now heat the olive oil in a saucepan and add the lamb shoulders. When they have completely browned, after about ten minutes, remove them to a plate.
  4. In the same oil, cook the onion with a little salt over medium heat and, when it becomes transparent, add the leek and garlic. Mix well and sauté for five minutes.
  5. Then add the tomato, thyme, rosemary and salt and pepper. Cook for ten minutes, stirring occasionally.
  6. Now pour in the wine and, when the alcohol evaporates after two minutes, add the lamb again and also add the carrots. Let everything simmer for two hours, mixing occasionally so that the cooking is even and does not stick from the bottom.
  7. After this time, rectify the salt and check that the meat is tender, if it is, remove from the heat. And now, it’s time to serve your shoulder of lamb stewed with vegetables accompanied by a garnish of your choice. Enjoy them!
