  • 1 kg. beef
  • 200 gr. chanterelles
  • 200 gr. from mushrooms
  • 500 ml. vegetable broth
  • 200 gr. Of flour
  • 2 teeth of Garlic
  • two onions
  • Thyme
  • Oregano
  • 200 ml. from Red wine
  • Olive oil
  • Salt

Preparation of stewed meat with mushrooms

  1. The night before preparing your stewed meat with mushrooms, cut the veal into large cubes and put it in a container with the 200 milliliters of red wine, a tablespoon of oregano and a pinch of salt. Cover the container with plastic wrap and put it in the fridge to sit overnight.
  2. The next day drain the veal, without wasting the wine, and put it on absorbent paper to release all the liquid. Save the wine for later.
  3. Peel the onion and cut it into julienne strips. And do the same with the garlic. Reserve it.
  4. In a deep plate, make the flour and pass the pieces of meat one by one until they are well covered by flour.
  5. Heat a large pot with a drizzle of olive oil and seal the pieces of meat in batches so that they do not pile up. As the pieces of meat brown, remove and reserve on a plate.
  6. In that same pot, add the onion and brown it over low heat for about 15-20 minutes, stirring from time to time. When the onion is transparent add the two sliced ​​garlic cloves and cook it all for another 5 minutes over low heat.
  7. Pour in the wine that you had reserved and turn up the heat to boil for a couple of minutes, then reduce the heat and add the vegetable broth, the meat and a pinch of salt.
  8. Wash the mushrooms in the tap to remove the remains of earth and the pieces. In a frying pan, with a drizzle of olive oil, sauté them over medium-high heat for a couple of minutes to brown. Then add the thyme and stir well for 2 more minutes. Now ready, add them to the stew you are preparing in the large pot.
  9. Cover the pot and simmer for 1.5 hours. You have to check from time to time that the meat has not run out of broth, if so, you see adding more vegetable broth.
  10. When you have 15 minutes of cooking left, uncover the pot to reduce the sauce better. Check for salt and rectify if necessary.
  11. After the last 15 minutes have passed. Remove from the heat and let it rest for at least an hour before consuming. You’ll see how delicious this stewed meat with mushrooms is!
