Asturian bean stew with ear recipe

With this Asturian bean stew with ear you will have a very tasty and intense dish with which to spend the winter well fed.

Ingredients

  • 500 gr. of beans
  • 2 blood sausages
  • 1 tip of Serrano ham
  • 2 sausages
  • 100 gr. bacon
  • 1 piece of pork leg
  • ½ pig’s ear
  • ½ glass of oil
  • 1 onion
  • two garlic
  • Saffron
  • 1 tablespoon of paprika
  • Salt

Asturian bean stew with ear recipe

  1. Soak the beans the night before, unless you bought them quick-cooking.
  2. Ready to use, put them in a pot with plenty of water. When the water boils, transfer the beans to another pot with cold water and add the onion cut into four pieces, the garlic without skin, the oil, the ear and the pork leg.
  3. Wait until the water boils again and add the paprika, blood sausage and chorizo.
  4. Let the dish cook for three hours. After two hours, add a couple of saffron threads and a little salt, stir and finish cooking.
