- We have to literally shave the beards off the mussels, being very careful not to cut ourselves while doing so in the process.
- Once clean, we fill a saucepan with water and add them inside. We peel and chop the onion well, or we pass it through the shredder, as you prefer. Add the onion along with the cayenne and the celery sticks. We put it on medium power for about 10 minutes.
- As soon as we see that the mussels are opening, we take them out and remove half the shell. We put them back inside so that they are finished for another ten or fifteen minutes.
