- 1 kg. from clams fresh
- 3/4 cup of water
- 3 teeth of Garlic
- 1 sheet of laurel
- 200 ml. from White wine
- 1 tablespoon of flour wheat
- 6 branches of parsley cool
- 1/4 cup olive oil
- 1/3 cup of coarse salt
- Fine salt
Preparation of steamed clams in green sauce
- To prepare these clams, the first thing you will do is remove the sand and to do this you must place them in a plastic container or in a pot with 4 liters of water, coarse salt and let it rest for three hours.
- In that time you must change the water at least three times. Afterward, wash them in cold water and drain. You should discard those that are open or broken because they could be bad.
- To cook the clams, pour the water into a pot with the bay leaf and put it on the fire, when it starts to boil, add them and cover.
- After two minutes, uncover and remove the open clams with a slotted spoon. Reserve the cooking broth and discard the clams that have not been opened. Reservation.
- Now you are going to prepare the green sauce, first mincing the garlic and parsley leaves as small as you can.
- Add the olive oil in a pot (it can be made of clay) and when it is hot, add the garlic. When they start to brown, add the flour, stir to dissolve and when it begins to change color, pour in the wine.
- Without stopping stirring, wait for the alcohol to evaporate, when this happens, add the cooking broth that you reserved and cook for five minutes. Then, add the parsley and correct the salt.
- Add the clams to the sauce, stir carefully, cook for two minutes and cover. After five minutes, serve your steamed clams in green sauce. Take advantage!
