Preparation of squid in tomato and onion sauce

  1. The first thing we are going to do is clean and cut the squid. Then wash them and let them drain so they lose all the water.
  2. Next, remove the skin from the two onions and cut them into julienne strips. Peel and cut the garlic cloves as well and put both ingredients in a pot with a little oil over medium heat.

  4. Peel and cut the four tomatoes into very small pieces and put them in the pot when the onions and garlic cloves have turned a golden hue. Add a pinch of salt, white pepper and cover the pot, letting it cook all together for at least a quarter of an hour on medium power.
  5. When this time has elapsed, add the white wine and turn the heat to full power for five minutes to evaporate the alcohol. Then turn off the fire. We already have the sauce ready, now let’s go for the squid.
  6. Place the squid in a pan with a little oil and let them cook for about five minutes on each side until you see that they take on a little color. Meanwhile, place the parsley in a mortar and mash it.
  7. If the squid are already more colored, add the sauce and the parsley and leave it all on a low heat for about five more minutes. Don’t forget to stir from time to time.
