  • 7 eggs
  • 1 pack of spinach fresh
  • two onions
  • 1 tooth of Garlic
  • 1 tablespoon of coarse salt
  • 3 tablespoons olive oil
  • Black pepper
  • Salt to taste

Preparation of spinach and onion omelette

  1. The first step in making this tortilla is to separate the leaves from the stems, discard any that are not in good condition, and soak them with a tablespoon of coarse salt.
  2. Stir the water a little and in a few minutes you will see how all the dirt they usually bring falls to the bottom. Rinse them with fresh water, drain, dry and chop them into thin strips.
  3. Next, peel both the onions and garlic cloves and chop them into small pieces.
  4. Add the olive oil to a frying pan and when it is hot, add the onions to poach them. Sprinkle them with a little salt to make them cook faster.

  6. Once the water has evaporated from the spinach, remove it from the heat and set it aside until cool.
  7. Next, beat the eggs in a bowl with the help of a fork until they are well integrated and season with salt and pepper. Add the spinach and mix again.
  8. To make the tortilla, pour the mixture into the same pan where you cooked the spinach and stir it a little so that it covers the entire bottom.
  9. Cook your tortilla over a low heat to avoid burning and when it sets, turn it over so that it is done on the other side. Take it off the heat when both sides are golden brown.
