But if you can, let the tomato cook little by little for as long as it needs. After a while, you will lose heartburn by itself.
  10. Continue uncovering, stirring and mashing until you see that the texture already resembles a sauce, and until the tomato is not acidic, in case you have not added sugar.
  11. When it seems to you that everything is to your liking, turn off the heat and pass the sauce through a Chinese or through a kitchen pin, a couple of times if necessary. It is about making the sauce finer, and unnecessary leftovers and chillies are strained.
