- ½ kilo of spaghetti
- 200 grs. mushrooms
- 100 ml. from soy sauce
- 1 zucchini
- 1 aubergine
- 1 bell pepper
- 1 carrot
- 1 tomato
- 1 onion
- Olive oil
- Ground black pepper
- Aromatic herbs
Preparation of spaghetti with vegetables and soy sauce
- First of all, we clean the vegetables very well under running water. Next we peel the carrot, onion, zucchini, tomato and eggplant aubergine.
- Next, we cut the pepper, onion and carrot into thin julienne strips.
- In a frying pan, add a little oil and poach these vegetables over medium heat with a pinch of salt for about 5 minutes.
- While the first vegetables are being made, we cut the eggplant aubergine and zucchini into slices, the mushrooms in slices and the tomato in medium dice.
- When the first vegetables are soft, we add the other vegetables that we have just cut, add a pinch of salt, cover and let them simmer for 10-15 minutes. Stir occasionally.
- We put a large pot on the fire with plenty of water, leaving a third of the pot free at the top so that it does not overflow later.
- Add a pinch of salt, and put on a high heat. When it starts to boil, add the spaghetti and let it cook according to the manufacturer’s instructions.
- When the spaghetti is “al dente” we remove the pasta, drain it well and add it to the pan with the vegetables. Add a pinch of ground black pepper and the aromatic herbs that we have chosen. We stir well.
- Finally we will add the soy sauce and stir again so that it mixes well.
- We let everything cook together for about 2-3 minutes so that the pasta takes on the flavor of the vegetables and the soy sauce, stirring from time to time with a spoon (preferably wooden).
