Recipe for meatballs in yogurt sauce
- To start the recipe we will make the meatballs. Dunk the crumbs of the half loaf of bread in milk to soften it. In another bowl add the minced meat, with parsley, the finely chopped garlic cloves, the pepper, the salt and the beaten eggs. Knead everything with your hands and then add the crumbs soaked in milk, until you make a very uniform dough. Knead it well until you can handle it with ease.
- Now go taking small portions of the minced meat with your hands and flour them a little. Using your hands, make a ball of the size that you like the most and place them on a tray. When you have turned all the meat into a ball, put the tray in the refrigerator for about 20 – 30 minutes until the mixture takes shape.
- We will prepare the sauce in the meantime. To do this, you are going to chop the onion into small pieces and fry it in a saucepan with the pepper, salt, saffron and a little olive oil. When the onion has taken on a little color, add the natural yogurt, with about 200 gr. should suffice.
- Stir until you get a creamy mixture. Now fry the meatballs a little, or you can add them directly to the mixture, so that they are boiled with the sauce, as you like. If you see that the sauce is too thick, add the cups of water.
