  • 200 gr. of cookies
  • 120 gr. of butter
  • 500 gr. mascarpone cheese
  • 200 gr. white sugar
  • 500 ml. from cream liquid
  • 80 gr. cornstarch
  • 4 eggs

Mascarpone cheesecake preparation

  1. You have to start by making the base of our rich mascarpone cheese cake that will be made with cookies. The first thing will be to crush the cookies well in a mortar, with the electric mincer or with the help of a rolling pin.
  2. When they are well crushed, melt the butter in the microwave for 1 minute, or in a saucepan over the heat, and when it is liquid add it to the cookies.
  3. Begin to stir with your hands to form a paste, as if it were wet sand. If it is very dry add more melted butter.
  4. Put the cookie mix in the base of the mold where you will prepare the cake. Squash well with your hands to make it flat and put the mold in the freezer while you prepare the rest of the mixture to set.
  5. Put the oven to preheat to 160ºC so that it reaches the right temperature.
  6. In a deep bowl, add the 4 eggs and start beating with the electric rods. When they are blended, add the sugar and beat again until you get a whiter and more homogeneous mixture.
  7. When you have your mixture well integrated add the cream, the mascarpone cheese and the cornstarch. Beat again until everything is well integrated.
  8. Take the mold out of the freezer, grease the edges a little with butter and pour the mixture you have prepared.
  9. Put in the oven at 160ºC with heat up and down and let it cook for 1 hour and 15 minutes.
  10. After the first hour, check if the cake is already made (poke it with a toothpick and check that it comes out dry) if you see it too runny, leave it for 15 more minutes.
  11. After 15 minutes your mascarpone cheesecake should be done. Take it out of the oven, let it cool and then it can be served.
