Ingredients

  • 1 loin of Salmon (500 gr.)
  • 1 lemon
  • 1/4 cup brown sugar
  • 1/4 cup of white sugar
  • 1/2 cup of sea salt
  • 15 black peppercorns
  • 2 tablespoons dill
  • 1 avocado mature

For the dressing:

  • 1 cup of mayonnaise
  • 2 tablespoons lemon juice
  • 3 sweet and sour pickles
  • 10 capers
  • 1/4 of onion red
  • Salt and pepper

Preparation of marinated salmon with avocado

  1. The first of all will be to prepare the fish: If it is frozen, thaw it first and then dry it well with an absorbent paper and remove the bones with the help of a tweezers. Reservation.
  2. In a bowl, mix the sugar, a tablespoon of dill, the lemon zest, the ground black pepper and the salt. Layer this mixture on a platter and lay the fish on top with the skin facing down.
  3. Next, cover the salmon with the rest of the mixture, cover the source with a film, place a weight on it to exert pressure and put it in the refrigerator for 24 hours.
  4. To make the dressing, dice the pickles, capers and onion and add them to a bowl. Add the mayonnaise, lemon juice and salt and pepper. Mix well and refrigerate.
  5. After 24 hours and once the salmon has been marinated, wash it with cold water and cut it into very thin slices with a sharp knife.
  6. Peel the avocado, remove the bone and slice it finely as well.
