- 400 gr. from macaroni
- 1 onion
- 2 teeth of Garlic
- 1 green pepper
- 1 Red pepper
- 1 carrot
- 1 zucchini
- 3 tablespoons tomato fried
- Olive oil
Preparation of the macaroni with vegetables
- Start by filling a pot with plenty of water, a drizzle of olive oil, and a tablespoon of salt. Bring to high heat and, when it starts to boil, add the pasta and cook for the time indicated on the package, which may vary depending on the thickness of the macaroni. Remember to stir from time to time to avoid sticking.
- Meanwhile, prepare the vegetables. Peel the onion and garlic cloves, the latter chop them into small cubes. The onion can be chopped in fine julienne or cubes, as you prefer.
- Add a good jet of oil to a pan and bring to low heat, when hot add the onion and garlic and sauté both ingredients until the onion begins to turn transparent.
- Cut the peppers into strips. In the case of carrots, peel and grate, also wash the zucchini and cut it into cubes, the latter does not need to be peeled as the skin contains many vitamins.
- When the onion has taken color, add the rest of the vegetables and the fried tomato, salt and pepper to taste and stir. Let cook until the vegetables are poached. Go testing to rectify the salt and pepper and leave it to your liking.
- Once the pasta is ready, you should strain it and add it to the pan in which you are preparing the vegetables so that it mixes to perfection. If necessary add a little more olive oil to integrate everything.
- Turn off the heat and serve these rich macaroni and vegetables in individual servings. You can add a little Parmesan cheese to give it the final touch, delicious!
