  • 400 gr. from macaroni
  • 1 tablespoon butter
  • 1 heaping tablespoon of wheat flour
  • 800 ml. milk
  • Nutmeg
  • Black pepper
  • Oregano
  • Parmesan or Pecorino cheese to taste

Preparation of the macaroni with béchamel sauce

  1. Fill a pot with plenty of water, add a tablespoon of salt and a splash of olive oil and bring it to high heat. When it comes to a boil, add the macaroni and cook for 10 to 15 minutes, depending on the type of pasta. It is important that you remove them during cooking to avoid sticking.
  2. While the pasta is cooking, you must dedicate yourself to making a creamy and delicious béchamel. To do this, place a spacious pan over low heat and add the butter and flour. Stir constantly with a manual stirrer and let the mixture cook for about 3 minutes. This step is essential so that the béchamel does not taste like raw flour.
  3. Now it is time to incorporate the milk preferably at room temperature or warm. First add a cup, stir and integrate and repeat the procedure until all the milk is finished. Salt and pepper your sauce and add nutmeg to taste.
  4. You should continue stirring with the rod over very low heat until the béchamel sauce begins to thicken, which may take several minutes. It is important not to stop stirring for a long time or the background could stick and cause the cream to be ruined. Once it has thickened to your liking, taste it and remove it from the heat immediately. Rectify the seasoning if necessary.
