  • 1 piece of loin tape of 1 kg.

Preparation of the loin stuffed with ham and cheese in the oven

  1. Turn on the oven and put it to preheat to 180ºC. Cut the tenderloin in half, cutting lengthwise but not splitting it in two, and add enough salt and ground black pepper inside.
  2. Next, you must cover both parts with the Serrano ham, the cheese and five dried tomatoes, the rest set aside. To give the loin its original shape, you must close the meat by tying it well with the help of a roasting thread.
  3. Put the tenderloin in an ovenproof dish and add a little olive oil, salt and pepper. Bake it for thirty minutes and, meanwhile, take the opportunity to prepare the sauce.
  4. Chop the shallots and put them in a pan with a little olive oil. They have to brown a little and become tender, leaving them on the fire for four minutes will be enough.
  5. Add the mustard, along with the tomato and oregano concentrate to your liking and also add the stock cube and the white wine. Wait for the almost entire liquid to evaporate and add the rest of the dried tomatoes, cut into pieces.
