Light Madrid tripe recipe

On a diet? Well, with this recipe for Madrid-style tripe light you no longer have to give up your favorite dishes.

Ingredients

  • 1 kg. beef tripe
  • 1 veal leg
  • 1 pork snout
  • 1 bay leaf
  • 1 onion
  • 1 tablespoon of flour
  • 2 tablespoons of paprika
  • 250 gr. from Serrano ham

Preparation of tripe a la madrileña light

  1. In a pressure cooker put the tripe together with the leg and the snouts so that they are blanched with water.
  2. Once it has boiled, pour the water and put new and repeat about three or four times.
  3. Remove the meat from the inside and with clean water you are going to put the onion, just peeled without cutting, and a bay leaf. Put all the meat and cook everything for about 30 minutes.
  4. Take out the leg and remove the bones and chop it up as well as possible, doing the same with the snout.
  5. In a saucepan put a splash of oil and when it is hot add the flour and cook the meat, along with the paprika and the chopped ham.
  6. Add the tripe after about five minutes and sauté everything together for about 5 minutes.
  7. Add the broth and cook it for 10 minutes.
  8. Now you just have to serve the dish and enjoy the flavor.
