Ingredients

  • 200 gr. lentils
  • 200 gr. dry quinoa
  • ½ onion
  • 4 cloves of garlic
  • 1 handful of green beans
  • ½ green pepper
  • ½ red pepper
  • 1 potato
  • 1 cube of concentrated vegetable broth
  • 1 tablespoon tomato paste
  • 1 bay leaf
  • 1 spring onion
  • Oil
  • Salt
  • Ground black pepper

Preparation of lentils with quinoa

  1. To prepare this exquisite variant of lentils, first peel and chop the onion very finely. Then peel the garlic cloves as well and cut them in half. Rinse the beans and cut them in half as well.
  2. The peppers also have to be washed and cut, without forgetting to remove the seed, and the carrot you have to, in addition to washing and cutting it, peel it.
  3. Now put a drizzle of extra virgin olive oil in a medium saucepan and sauté all the vegetables with the bay leaf and a pinch of salt over medium heat. Stir occasionally until well poached. Five or ten minutes will be enough.
  4. Once all the ingredients are done, cover them with plenty of water, about a liter and a half. Add the vegetable stock cube and the tablespoon of tomato paste and, when the water starts to boil, lower the heat to a minimum.
  5. Peel the potato and cut it into small squares. Add it to the pot and wait ten minutes or so.
  6. Pour half a liter more of water, and when it boils again, add the lentils and quinoa to the pot. Let all the ingredients cook together for about twenty more minutes.
  7. Go checking and, when both the lentils and the quinoa are tender, rectify the salt if necessary, add some more ground black pepper and remove from the heat. Chop the chives very finely and add it to the pot.
  8. And that’s all! It’s that simple to prepare delicious lentils with quinoa.
