Ingredients

  • 250 gr. from lentils pardinas
  • 1 Asturian or Galician chorizo
  • 1 piece of ham
  • 1 onion
  • 1 tooth of Garlic
  • two carrots
  • 400 gr. from pumpkin
  • 4 zucchini
  • 4 potatoes
  • 2 or 3 fresh ears of corn
  • 12 or 15 beans (optional)
  • 1 pinch of sweet paprika
  • Colorant
  • Olive oil
  • Salt

Canarian lentil stew preparation

  1. Pour a splash of olive oil into a pot. Chop the onion and garlic clove, all very small, and add them without even lighting the fire.
  2. Chop up all the other not-too-small vegetables, and add them as well. Add the chorizo ​​and the whole piece of ham. Peel the ears, cut them in half and add them too.
  3. Then peel the potatoes, cut them into small squares and put them in the pot along with the rinsed lentils and the beans if you are going to add them (they must be soaked from the night before). Cover everything with water, and heat it over high heat.
  4. Add a pinch of sweet paprika, salt to your liking (keep in mind that the stew has ham and chorizo) and a little coloring.
  5. Once it begins to boil, lower the heat to medium, and when the potatoes and lentils are tender, remove the chorizo ​​and ham.
  6. Chop these two ingredients into pieces, add them back to the cauldron and that’s it. You can now serve your Canarian lentil stew, delicious!
