Ingredients

For the mass:

  • 300 gr. Of flour
  • 150 gr. of butter
  • 6 spoons of water
  • Salt

For the lemon cream:

  • 200 gr. of sugar
  • 3 lemons
  • 3 yolks egg
  • 100 gr. of butter
  • For the meringue:
  • 4 clear of egg
  • 8 tablespoons sugar

Lemon pie recipe with meringue

  1. Sift the flour into a bowl and add the salt, stir to mix both ingredients. Add the butter, a little melted, along with the water. Begin to beat until you form a uniform dough.
  2. You are going to let this dough rest in the fridge for at least a quarter of an hour to gain consistency.
  3. When the dough is ready, you stretch it out and place it on the baking tray, previously greased with a little oil. Put in the oven and let it bake at 150º for a quarter of an hour. If you see that it is browning, take it out first.
  4. Then squeeze the lemons and grate the skin, but stop before reaching the white area.
  5. Mix, beating well, the egg yolks with the butter, sugar, the skin and lemon juice, obtaining as a result a cream that you are going to keep in the fridge to cool.
  6. Beat the egg faces with the sugar, which will give you the meringue, which you will also put in the fridge to rest.
  7. You just have to fill the cake with the lemon filling that you have made, cover with the meringue and gratin a little in the oven.
