- 4 leeks
- 1 onion
- 1/2 branch of celery
- two potatoes
- 3 apples
- 2 tablespoons Butter
- 2 tablespoons olive oil
- 750 ml. broth or water
- 250 ml. from cream liquid
- 100 gr. from Serrano ham (optional)
- A pinch of nutmeg
- Black pepper
Leek and apple cream preparation
- Start by cleaning the leeks and cutting off the white part. Discard the first skin and cut the base which is usually the hardest.
- Peel the onion, cut it into small pieces and then separate the celery leaves, remove the strings and cut half a stalk into slices.
- Peel the potatoes, wash them and cut them into small cubes so that they soften faster, peel the apples, core them and chop.
- Combine the butter and oil in a pot, when heated, add the onion and leeks to poach them for five minutes without stopping moving. Add the potatoes, celery, and apples and sauté for five minutes.
- Pour in the broth and let it boil for 30 minutes over low heat. Cut the ham into strips and fry it in hot oil for a few minutes. Drain excess oil on absorbent paper.
- After time, remove from heat and let cool. Reserve a little broth and blend with the help of a hand mixer or blender.
- If it’s too thick, add your reserved broth. When you have obtained the consistency of your liking, pour the cream, add the nutmeg, salt and pepper and mix.
- Pass your cream through a strainer if you prefer fine textures and reheat it in the pot for a few minutes. Decorate your cream of leeks and apple with the ham and some parsley leaves. Clever!
