  • 1 bay leaf
  • 1 teaspoon baking soda

For the sauce:

  • 1 onion White
  • 4 long onions
  • 6 tomatoes
  • 2 cloves of garlic
  • 1 tablespoon powdered food coloring
  • 1 teaspoon of cumin
  • 3 tablespoons vegetable oil
  • 3 branches of cilantro chopped
  • Black pepper
  • Salt

Preparation of tongue in Creole sauce

  1. Before starting, rinse the tongue and when it is clean place it in a large pot, cover it with the beer, water and add the peeled garlic cloves, the bay leaf and season lightly.
  2. Take to the fire and cook for two and a half hours or until it softens. If you have a pressure cooker, one hour will be enough.
  3. Once the tongue is soft, remove it from the heat, drain it, let it rest and reserve the broth. When it cools, remove the skin and any remaining fat or cartilage and slice it.
  4. Next, dissolve the butter and oil in a pan and brown the tongue slices for a few minutes. Reservation.
  5. To make the sauce, peel the onion and cut it into slices. Dice the long onion and garlic and then remove the skin from the tomatoes, the seeds and cut them into small pieces.
  6. Heat the oil in a large pot and add the onion, garlic, long onion, tomato, and cumin, and sauté for ten minutes. Stir frequently so it doesn’t stick to the bottom.
  7. When your sauce is soft, salt and pepper, add the coloring, a cup of the reserved cooking broth and cook for ten minutes over low heat. Then incorporate the tongue and cook for 15 minutes.
