  • 4 kid legs
  • 4 potatoes
  • two onions
  • 1 head of garlic
  • 100 gr. lard
  • 1 branch of rosemary
  • 2 sprigs of parsley
  • Water
  • Ground black pepper
  • Salt

Segovian style baked kid preparation

  1. To prepare this kid in the oven in the Segovia style, first you have to peel the potatoes and wash them well, so that they do not have any dirt left. Then drain them as much as you can, and cut them into slices.
  2. Also peel the onions, and cut them equally into slices. Cut the garlic cloves in the center of each one. Wash the parsley, and chop it very finely. Put the oven to preheat to a temperature of 165ºC.
  3. While the oven is preheating, place the kid legs in a clay pot. Brush them with the lard on both sides, and add salt and ground black pepper.
  4. Put the garlic cloves and rosemary in the saucepan. Pour two glasses of water, and put the casserole in the oven for 30 minutes. Once this time has passed, take the casserole out of the oven, turn the kid legs over and put the casserole back in the oven.
  5. This time bake them for 30 more minutes, then remove the casserole, without turning off the oven.
  6. Now pour two more glasses of water into the casserole, and add the potatoes and onion, with a little salt and ground black pepper.
  7. Sprinkle the chopped parsley over the casserole, and return it to the oven. Raise the temperature to 200ºC, and bake for another 30 minutes.
  8. Take the tray out of the oven again, turn the legs of lamb over and put it in the oven again. Wait another 30 minutes for the kid legs to brown well.
  9. And now you can turn off the oven, remove the casserole and when a minute or a little more passes, set aside this exquisite Segovian-style kid.
