Ingredients

  • 4 suckling kid legs
  • 1 piece of kid’s liver
  • 2 glass of white wine
  • 4 teeth of Garlic
  • 1 glass of bread crumbs
  • 2 bay leaves
  • Cumin
  • Sweet paprika
  • Thyme
  • Olive oil
  • Vinegar
  • Coarse salt

Preparation of the marinated baked kid

  1. To start making this exquisite baked kid, the first thing you should do is prepare the marinade. So, to start, fry the kid’s liver for five minutes over medium heat in a frying pan with oil. As soon as it’s ready, put it in a mortar.
  2. Now peel the garlic and put them in the same mortar together with the coarse salt, a little cumin, the breadcrumb soaked in vinegar and the sweet paprika. Mash everything very well until it forms a homogeneous mixture.
  3. Next, clean the kid’s legs and remove any traces of fat that they may contain. Dry them with absorbent kitchen paper and spread them with the previous mixture, if possible with a kitchen brush so that they are well covered.
  4. As soon as they are, place them in a baking dish and add the two bay leaves and a little thyme. Cover everything very well with plastic wrap and leave the dish in the fridge for 24 hours.
  5. The next day, preheat the oven to 180ºC. When hot, take the lamb legs out of the fridge and brush them with olive oil. If the kid has released a bit of broth, set it aside, pour half the white wine into the bowl and put the tray in the oven.
  6. After three-quarters of an hour, take the tray out of the oven and turn the kid’s legs over. Pour the reserved broth and the rest of the wine over the top and return the tray to the oven. Wait three-quarters of an hour more, and see if they are ready.
  7. Clever! Now you can turn off the oven, put the tray aside and, as soon as it rests, you can serve this exquisite marinated baked kid. You’re going to love it! We hope you liked this recipe, good luck!
