The mango jelly It is perhaps the most irresistible of all jellies and you can eat it alone, for dessert, or spread it on cinnamon butter cookies and even a couple of French toast.

  • 2 kg of green mango
  • 1.5 kg of sugar
  • 1 liter of water
  • Vanilla (optional)

Mango jelly preparation

  1. To prepare a mango jelly, it is advisable to use green mango, as it has the ideal flavor and structure for jelly. The best type of mango you can buy to make jelly is known as lint mango, since the pulp is much easier to remove.
  2. Wash the green mangoes, remove the shells and cut them into pieces. Place the mangoes in a large pot, add the liter of water and cook for 30 minutes or until the mango pulp is soft enough.
  3. Remove the mangoes and let them cool slightly. Then, in a bowl, start rubbing the pulp of each of the mangoes against a preferably large cheese grater. When you pass the mango through the holes of the grater, the pulp will come off easily.
  4. Place the pulp in a pot and add the sugar. If desired, add a teaspoon of vanilla.
  5. Cook the pulp over low heat and constantly stir the preparation with a wooden paddle. After 20 minutes you should begin to notice that the mango jelly separates perfectly from the walls of the pot and you can see the bottom of it, that means that the preparation is ready and it is time to turn off the heat.
  6. Remove the pot from the heat and begin adding the mango jelly in molds or on a pre-moistened glass baking tray.
  7. To prevent air bubbles from forming, tap the pan or tray against a hard surface such as a table so that the jelly is distributed properly.
  8. Let the mango jelly cool to room temperature and then store in the fridge. When enjoying your jelly we recommend that you accompany it with a little Gouda cheese, the mixture of flavors on your palate will be simply wonderful. What are you waiting to try it?
