- 1 can of tomatoes peeled
- 1 onion
- 2 teeth of Garlic
- 1 carrot
- 1 teaspoon of sugar
- 2 glasses of chicken broth
- 3/4 cup short pasta
- 1 tablespoon of oregano
- 1 teaspoon dried basil
- Ground black pepper
- Basil leaves
- Grated Parmesan cheese
- 3 tablespoons olive oil
- Salt to taste
Preparation of Italian tomato soup
- First of all, you need to cut the onion, garlic and carrot finely after peeling them.
- Then, add the olive oil in the pot that you are going to use to make the soup and when it is hot put the onion and garlic to brown over medium heat for a few minutes.
- When the onion is transparent, add the carrot, the dried basil, the oregano and sauté for three minutes without stopping moving.
- Then add the tomato and sugar, lower the heat, cover and cook for 30 minutes. Occasionally stir with a wooden spoon so it doesn’t stick.
- After time, remove from heat and blend with a hand mixer or blender, although if you don’t want to blend it, nothing happens. Once you have a thick but homogeneous puree, return to the pot, pour in the broth and salt and pepper.
- As soon as the soup comes to a boil again, add the pasta and cook for ten minutes or until al dente.
