For the roast beef:

  • 1 kg of boneless high loin
  • 1 onion big
  • 3 teeth of Garlic
  • 1 leek
  • 1 glass of Red wine
  • 1 glass of port wine
  • Olive oil
  • Salt and pepper

For the tartar sauce:

  • 1 cup of mayonnaise
  • 3 tablespoons capers
  • 1 tablespoon Dijon mustard
  • 2 tablespoons pickled gherkins
  • 1 tablespoon of parsley

Preparation of roast beef with tartar sauce

  1. The first thing you should do is tie the cut of meat with a kitchen string so that it does not lose its shape during cooking. Then season the tenderloin with salt and pepper to taste and place it on a baking sheet.
  2. Peel, wash and cut the onion into very small squares. Then do the same with the garlic cloves and the stem of the leek.
  3. In a frying pan add a good jet of olive oil, bring to medium heat and when hot, add the onion and fry until poached. Then add the garlic and leek and cook everything together until the garlic starts to smell.
  4. When this happens, add the red wine and port wine to the pan and let the alcohol evaporate over low heat for 3 minutes. Mix the wines with the other ingredients and remove the pan from the stove.
  5. Add half of the pan mixture on top of the meat. Put the roast beef in the oven and cook for 30 minutes at 180 * C. After time, open the oven, turn the tenderloin, add the rest of the sauce from the pan and bake for 30 more minutes.
  6. While the roast beef is baking we are going to prepare the tartar sauce. You’ll see how easy it is! To do this, chop the capers, parsley and pickles finely.
  7. Then add the mayonnaise to a bowl and stir until you feel creamy. Then add the mustard and continue mixing.
  8. Add the capers, parsley and pickles to the bowl and mix with a soup spoon. It’s ready! Cover the bowl with aluminum foil and let the tartar sauce rest in the fridge.
  9. When the meat is done, take it out of the oven, remove the cord and let it cool slightly. Then slice into 1 or 2 cm thick slices, depending on your taste.
  10. Serve your roast beef with tartar sauce with a little of the cooking juice and a good portion of sauce. And if there are leftovers, use them to make amazing sandwiches and snacks. This recipe will please everyone!
