  • 1 piece of 1 kg. beef tenderloin
  • 1 tablespoon Dijon mustard
  • Olive oil
  • Ground black pepper
  • Salt

For the mustard sauce:

  • 2 tablespoons Dijon mustard
  • 50 ml. brandy
  • 150 ml. meat broth
  • 20 gr. corn flour

Preparation of roast beef with mustard sauce

  1. The first thing you should do to prepare this roast beef is to check that the meat is at room temperature. If so, spread the piece with a little olive oil, mustard and ground black pepper to your liking. Let it sit with these ingredients for about half an hour.
  2. Once this time has elapsed, pour a drizzle of olive oil into a pan, just enough to cover its surface, and heat it over medium heat. Once it is very hot, place the beef tenderloin in it and brown it all over. Meanwhile, go preheating the oven to 220ºC.
