  • 1 1/3 cup rice arborio
  • 150 gr. from mushrooms or assorted mushrooms
  • 150 gr. from prawns
  • 1 onion
  • 2 teeth of Garlic
  • 1 cup of Parmesan cheese
  • 1 cup of white wine
  • 1 tablespoon of extra virgin olive oil
  • 1 tablespoon of butter (optional)
  • 1.25 liters of fish broth
  • Coriander leaves
  • Salt and pepper
  • 1 teaspoon of ground saffron

Preparation of mushroom and prawn risotto

  1. The first thing you should do is put the fish broth in a pot and bring it to the fire so that it begins to heat up. When you use it it should be at the boiling point.
  2. Then wash the champignons or mushrooms that you are going to use well. Chop into small pieces and reserve.
  3. Peel and dice the onion, do the same with the garlic. Peel the prawns and also cut them into small pieces. Reserve.
  4. Heat the olive oil in a large saucepan. Add the chopped onion and a little salt. Let it fry for about 5 minutes over medium heat.
  5. When the onion is transparent add the garlic and mushrooms. Sauté for 2 minutes and add the chopped prawns.
  6. When the prawns have released their juice and browned, add half a cup of white wine. Increase the heat, stir well and when the alcohol has evaporated, add the ground saffron and pepper to taste.
  7. Now is the time to add the rice, mix so that it is integrated with the rest of the ingredients and add the rest of the white wine. Stir until most of the wine has been absorbed.
  8. Then start adding the hot broth little by little with a ladle and stir constantly with a wooden spoon.
  9. Every time you see that the rice begins to dry, pour a ladle of broth while stirring.
  10. When the rice has reached its doneness, add the butter, Parmesan cheese and stir again. Rectify the salt.
  11. Remember that you must serve your mushroom and prawn risotto at the moment so that it does not lose the creaminess that characterizes it. If you like, you can decorate with some coriander leaves. Enjoy your meal!
