Ingredients

  • 3 carrots medium
  • 2 beets
  • 1/2 onion
  • 1 Apple
  • 1/2 cup coriander chopped
  • 4 tablespoons mayonnaise
  • 1 tablespoon mustard
  • Salt

Preparation of carrot and beet salad

  1. Wash the carrots, then peel them and cut them into medium cubes. Add plenty of water to a saucepan and when it boils add the carrots and cook until soft, which will take about ten minutes.
  2. Wash the beets, cut them into four parts and leave them to cook in another saucepan with boiling water until they are very soft. They only need twenty minutes but notice because if they run out of water you will have to add more.
  3. While the vegetables are cooking, chop the coriander finely and peel and chop the apple as well. Do not forget to remove the heart.
  4. Next, peel and cut the onion into very small squares and, if the carrot is already done, strain it and let it cool in a colander.
  5. To prepare the dressing, mix the mayonnaise, mustard, onion, and salt to taste in a bowl. Stir with a spoon until all the ingredients are well integrated. Taste the dressing and rectify the salt.
  6. When the beets are soft, run them under cold water to release the heat, then remove the skin with your hands and cut them into medium squares.
  7. Add the carrot, apple, beet and coriander to the salad bowl. Then add the dressing and stir with a wooden paddle to integrate all the ingredients well and season the carrot and beet salad correctly. And now serve and enjoy, let’s eat!
