To make the stock, you can use the fish that you like the most, we recommend using whitebait, but another good option could be monkfish or squid, everything will depend on the final flavor you want it to have.


  • 1 fish or 200 gr. from trash
  • 50 gr. galleys
  • 100 gr. heads of prawns
  • 3 onions
  • 3 tomatoes
  • 2 ñoras
  • 4 teeth of Garlic
  • Parsley
  • Salt
  • Olive oil

Preparation of the fish stock

  1. Fill a saucepan with cold water and put it on the fire, with maximum power, until it begins to boil. Once you see it bubbling, cut the power in half.

  8. Chop the fish you have chosen and put it in a basket, which you will put inside the saucepan to give it flavor. In this way, no pieces of fish will remain in the broth.
  9. Cook for a quarter of an hour, and after that time, strain the broth.
  10. When you are going to add it to the paella, you will have to put it hot, so if you are going to reserve it for another time, before adding it, put it in the saucepan for a few minutes.
