Quinoa Stuffed Zucchini Recipe

Follow this recipe step by step to prepare some delicious zucchini stuffed with quinoa, a quick and simple dish that makes it perfect for when you have to serve many people.


  • 6 zucchini
  • 1 onion
  • 1 carrot
  • 1 bell pepper
  • 1/2 cup of quinoa
  • 150 gr. grated cheese
  • 1 egg
  • Salt

Preparation of zucchini stuffed with quinoa

  1. Put the quinoa to cook in a saucepan with plenty of water for about 15 – 20 minutes, until it is very tender.
  2. Peel the onion and chop it well into small pieces, as well as the bell pepper and the carrot.
  3. First, fry the onion with a little olive oil and when it is golden, add the carrot and the pepper.
  4. Beat the egg and add it to the mixture, stirring well so that it does not finish curdling.
  5. After about 5 minutes, all this is transferred to the glass of a blender and beat well.
  6. Cut the zucchini in half, remove the meat and reserve for a few minutes. By the way, put the oven on at 180º C.
  7. When the quinoa is ready, strain it and drain well and distribute among the zucchini. Cover with the sauce that you have made and the grated cheese.
  8. Bake for about 15 minutes and your plate is ready to serve.
