Follow this recipe step by step to prepare some delicious zucchini stuffed with quinoa, a quick and simple dish that makes it perfect for when you have to serve many people.
Ingredients
- 6 zucchini
- 1 onion
- 1 carrot
- 1 bell pepper
- 1/2 cup of quinoa
- 150 gr. grated cheese
- 1 egg
- Salt
Preparation of zucchini stuffed with quinoa
- Put the quinoa to cook in a saucepan with plenty of water for about 15 – 20 minutes, until it is very tender.
- Peel the onion and chop it well into small pieces, as well as the bell pepper and the carrot.
- First, fry the onion with a little olive oil and when it is golden, add the carrot and the pepper.
- Beat the egg and add it to the mixture, stirring well so that it does not finish curdling.
- After about 5 minutes, all this is transferred to the glass of a blender and beat well.
- Cut the zucchini in half, remove the meat and reserve for a few minutes. By the way, put the oven on at 180º C.
- When the quinoa is ready, strain it and drain well and distribute among the zucchini. Cover with the sauce that you have made and the grated cheese.
- Bake for about 15 minutes and your plate is ready to serve.
