There is no easier starter than to make some stuffed eggs with tomato, easy and quick and that can be used as a starter or snack food when you have a visitor.
Ingredients
- 8 eggs
- 2 cans of tuna
- 50 gr. from Red peppers
- 8 tomatoes
- Olive oil
- Pepper
Preparation of stuffed eggs with tomato
- While the eggs are cooking in a saucepan with plenty of salt, chop the red pepper and fry it in a pan with a little olive oil and pepper.
- Peel the tomatoes (it will be easier if you steam them) and cut them into quarters, removing the seeds.
- Crush the tomatoes into a paste, at which point you add the fried pepper pieces and the tuna from the cans, without getting any of the oil.
- Add a little water and blend to make a homogeneous sauce in which all the ingredients have been integrated.
- When the eggs are ready, you peel them and cut them right in half vertically. With a spoon you extract the yolk, being very careful not to break the rest of the egg.
- Fill the remaining space of each egg with the mixture you have prepared and you will have your plate ready.
