- Let’s get down to business. First you have to remove the fat from the schnitzel, and if it is veal, the nerve. Beat the egg with salt and pepper and fill a plate with flour and another with breadcrumbs. If you want, in the breadcrumbs you can also put grated cheese and mix it.
- Let the schnitzel fillets soak in the egg so that they take on the flavor for about 10 minutes or so.
- After that time, you pass them through the flour, then through the breadcrumbs and sauté them with enough olive oil, so that they are done well on both sides. Once all are done, you let them rest on a plate with absorbent paper so that they release the excess oil.
- Now let’s go for the fries. You simply peel the potato, wash it well under running water, and cut it into the shape of French fries. You put them to fry in the same oil that you used for the schnitzel or in a new one, as you prefer.
