  • 1 kg. from aubergines
  • ½ kilo of ripe tomatoes
  • 100 grams grated light cheese
  • 120 grams fresh mozzarella
  • Olive oil
  • Basil
  • 1 pinch of ground black pepper
  • Salt

Preparation of the aubergines with light parmigiana

  1. To start this recipe for light parmigiana aubergines, we have to wash and cut the aubergines into slices of between five and ten millimeters. Then we put them in a colander with salt on top and let them drain for at least 30 minutes.
  2. When the aubergines have already removed all the liquid, we will wash them again and dry them with kitchen paper. Then we will place them well extended on the oven tray to roast them. We put them in the oven at 150ºC for 20 minutes.
  3. Meanwhile we wash the tomatoes and remove the skin. We cut them into small cubes and in a frying pan with a drizzle of olive oil we fry them with a little salt and some ground black pepper. We chop the basil and also add it to the tomato.
  4. Let the tomatoes cook for about 20 minutes, stirring occasionally. When they are ready, we pass them through a Chinese or a kitchen strainer, so that they are more liquid and without seeds. We booked.
  5. When the tomato and the aubergines are ready, we start to assemble the plate to give it the final baking. In a baking dish we place a bed of tomato sauce and on top a layer of aubergines, the grated cheese and a few slices of fresh mozzarella.
  6. We repeat the process again until we finish with the ingredients. The last layer should be tomato, cheese and a little basil.
  7. We put the dish in the oven and let everything cook for approximately 30 minutes at 150ºC. However, we must check from time to time, because it is possible that it is done a little earlier.
