If you like eggplant aubergine and you have a food processor at home, you cannot miss this magnificent recipe for aubergines parmigiana in thermomix!
This popular dish of Italian cuisine is ideal, both to serve as a garnish accompanying a meat or fish dish, as well as to take as a starter. And it is that the aubergines parmesan in thermomix go well with almost all dishes and it will take very little to cook them.
Serve them with a grilled chicken or one Golden baked and you will have achieved a balanced menu to lick your fingers.
Ingredients:
- two aubergines
- 600 gr. from tomato crushed
- 50 gr. Of olive oil
- 1 branch of fresh basil
- 1 tablespoon of salt
- 1 spoon of sugar
- 100 gr. mozzarella
- 100 gr. grated Parmesan cheese
- Oregano
Preparation of the aubergines parmesan in Thermomix
- To prepare these delicious aubergines parmesan in Thermomix we are going to use the Thermomix varoma container. If you don’t have this container, we recommend that you steam your aubergines in the traditional way.
- We wash the aubergines and cut them into finger-wide slices. We put them in the varoma container.
- Now in the thermomix glass we add the oil, the tomato, the basil (only the leaves), the salt, the sugar and a pinch of oregano.
- Place the varoma container on top of the glass and program the thermomix for 30 minutes at varoma temperature and speed 1. While everything is done, preheat the oven to 200ºC.
- After 30 minutes we remove the sauce from the glass and the aubergines from the varoma. And we begin to assemble the dish on the baking sheet.
- First we put a layer of aubergines, we put a layer of Parmesan cheese and mozzarella and with a spoon we spread the tomato on top.
- Make two more layers in the same way: eggplant aubergine, cheese, and tomato. Put in the oven with the gratin option and leave them for 15 minutes.
- After 15 minutes, the aubergines parmesan in Thermomix are ready to serve. You’ll see how delicious they are!
