Ingredients
- 1 duck
- 5 potatoes medium
- 200 ml of wine
- 200 ml brandy
- 2 glasses of water
- 1 tablespoon of sugar
- Olive oil
- Salt to taste
- Pepper
- A few sprigs of parsley
- A few branches of rosemary
- 1 spoon of xanthan gum
Preparation of the duck in wine
- Start by preheating the oven to 200 ºC so that it is at temperature when you need it.
- While the oven is heating, clean the duck well both inside and outside, removing any feathers that may have been left on the outside as well as the entrails inside.
- Once we have it very clean, we must put some branches of rosemary inside. Salt and pepper to taste and place on the baking tray that you are going to use.
- Put the duck in the oven for 15 minutes at a temperature of 220 ºC. While cooking, clean, peel and quarte the potatoes to incorporate them into the preparation, season with salt and pepper and add a drizzle of olive oil for more flavor.
- When the first 15 minutes of cooking have passed, add the potatoes to the tray and lower the temperature to 200 ºC. Let cook for another 25 minutes so that the duck is made in its own juices and is much richer.
- After that time, remove the duck from the oven and remove the oil, if the potatoes are still raw, let them cook for 10 more minutes.
- Then you must carve the duck, that is, separate the bone carcass from the meat so that it is much easier to consume. Reserve the bones for the sauce.
- In a pot add a little oil and, when it is hot, begin to brown the duck bones. Let them brown and then pour in the brandy and lightly shake the pot very carefully to flambé the preparation.
- When the fire is out, add the wine along with the water and salt, let it boil over high heat for 20 minutes.
- Finally, add the xanthan gum. Stir until you get a thick sauce, sprinkle with sugar and pepper and then strain the sauce to make it smooth and with a perfect texture.
- Then add the duck, potatoes and sauce to a pot and cook for about 3 minutes. Remove from heat and serve.
