- 4 confit duck thighs
- 300 gr. figs
- 1 onion
- 1 cup of port wine
- 3/4 cup of water
- Green pepper to taste
- Mint leaves
Preparation of duck confit with fig sauce
- Before starting you must preheat the oven to 180 ° C, although the duck pieces are already cooked, they need heat to be able to eat them and to achieve the crunchy texture on the outside that characterizes them.
- Peel the onion and cut it very small. Take two tablespoons of the duck fat and add it to a pan, when it has dissolved and heated add the onion, let it poach.
- Next, wash the figs, peel them and cut them into small pieces. When the onion has browned, add them and give them a couple of turns.
- Pour in the wine, the pepper and when it starts to boil add the water. Cook over low heat for 20 minutes and when ready, blend, strain and reserve.
- Place the confit duck thighs on a tray or an ovenproof dish and bake for 30 minutes.
- Remove from the oven after the suggested time, serve immediately, accompany with the sauce and decorate with some mint leaves.
