To make the green sauce:

  • 180 ml. extra virgin olive oil
  • 5 teeth of Garlic

  7. Wash the potato and dry it, without peeling it. Brush with oil and salt, and cover with aluminum foil. Once the oven is very hot, put the leg in it, and let it cook for about 20 minutes.
  8. Meanwhile, go poaching the 4 eggs. When this time passes, cut the potato into 4 pieces and brown the spinach that you had reserved for a few seconds, in a pan.
  9. Place a piece of potato on each plate, and mash it. Top with the poached egg, and add pureed spinach to each plate. Finally, garnish with the golden spinach leaves.
