- 3 zucchini
- two potatoes
- 4 leeks
- 1 onion
- 4 cups of chicken vegetable broth
- 3 cheeses
- 3 tablespoons olive oil
- 2 sprigs of coriander
- Black pepper
- Salt to taste
Preparation of cream and leeks and zucchini
- Start by washing the leeks with plenty of water, remove the first skin and chop only the white part. The green can be used for soups or broths. Dice the onion after peeling it.
- Peel the potatoes, rinse them and dice them into small cubes, then wash the zucchini, cut the ends and chop the same size.
- Heat the oil in a pot and fry the leek together with the onion for ten minutes, you must stir every so often to avoid burning.
