  • 500 gr. carrots
  • 1 onion
  • 1 Orange
  • 2 1/4 cups vegetable broth or water
  • 1/2 cup of cream
  • 3 tablespoons olive oil
  • 1/2 teaspoon of cumin
  • 1/2 teaspoon ground ginger (optional)
  • Coriander leaves
  • A pinch of black pepper
  • Salt

Preparation of the carrot and orange cream

  1. To start with this delicious recipe, wash and peel the carrots. Then cut them into medium pieces and reserve.
  2. Peel the onion, remove the first layer and dice. Then wash the orange and squeeze it. Reserve the juice.
  3. Heat the olive oil in a pot and cook the onion with a little salt. When it begins to brown, add the carrots and cook for 10 minutes over medium heat, stirring frequently.
  4. Add the vegetable broth or water, the orange juice and cook for 20 minutes. When the carrots are soft, add the pepper, cumin, ginger, cream and salt to taste. Stir well and remove from heat.
  5. Very carefully, pour everything into the blender or into the blender glass and blend until you get a homogeneous cream. If you like a fine texture, pass it through a strainer afterwards.
  6. If you prefer your carrot and orange cream very hot, take it back to the fire and give it a first boil. The good news is that you can also consume it cold if it is very hot. Decorate with coriander leaves and that’s it. Enjoy it!
