  • 1 broccoli
  • 400 gr. from pumpkin
  • 1 leek
  • 1 onion
  • two potatoes little
  • 1 carrot
  • 500 ml. vegetable or chicken broth
  • 1/4 cup parmesan cheese
  • 1 teaspoon of mixed herbs
  • 2 tablespoons olive oil
  • Black pepper
  • Salt

Preparation of cream of broccoli and pumpkin

  1. You are going to start by removing the skin from the pumpkin, extracting the seeds and veins and cutting into small cubes.
  2. Then wash the broccoli and separate the florets from the trunk. Peel the potatoes and carrots, wash them well, split the potatoes so that they release more starch and cut the carrots into slices.
  3. Cut the white part of the leek into thin rings after washing and removing the first skin, and dice the onion once peeled.
  4. Add the olive oil in a pot, add the onion with a pinch of salt when it warms up and fry it for a few minutes.
  5. Once transparent, add the leek, carrot, herbs and cook for five more minutes.
  6. Then add the pumpkin, broccoli, sauté for a couple more minutes and pour in the broth. Add a little salt, the potatoes and, when it comes to a boil, cover and boil for 30 minutes.
  7. After this time the vegetables will be tender so remove from the heat and blend with an electric mixer or in a blender, rectify the salt and mix again.
  8. Pour the broccoli and pumpkin cream back into the pot, add a pinch of pepper and after boiling it is ready to be served with a touch of Parmesan cheese. Take advantage!
