- 3 teeth of Garlic
- 1 green pepper
- 1 Red pepper

- 1 onion
- 1 bay leaf
- 2 tablespoons thyme
- 1 tablespoon of salt
- ½ glass of Red wine
- 1 tablespoon of pepper
- Extra virgin olive oil
Preparation of stewed meat with tomato
- If you want your tomato stewed meat to have a unique flavor, cut it into cubes the night before and put it in a large container covered with red wine, then cover it with plastic wrap. Let it marinate overnight, the next day drain and dry the meat to use in this recipe.
- To start, place a large pot on the fire with a good drizzle of oil at medium power. When the oil is hot, add the meat and brown for about 10 minutes, so that it takes on a good color. At that time, withdraw and reserve for later.
- Peel the garlic cloves and chop them into small pieces, while the peppers cut them into strips. The onion, after peeling and washing it, chop it into very small pieces.
- In the same pot in which you have browned the meat, first poach the onion over low heat until browned, signal for you to add the garlic and minced peppers. Stir and sauté everything together for another 10 minutes.
- Then add the bay leaf along with the thyme and pepper. Sauté again for another 10 minutes, stirring the ingredients from time to time so that they do not stick or burn.
- Pour half a glass of red wine and turn up the heat to boil, then reduce to half power and wait until the alcohol evaporates.
- While you wait you can peel the tomatoes. Remove the seeds and the mashs to make a smooth sauce, adding a little water when you mash to make it better.
- Has the alcohol already evaporated? Then add the tomato, a tablespoon of salt and stir to cook everything together for about 7 minutes or so with medium-low heat so that the base of your meat stewed with tomato does not dry out.
- Add the meat and cover so that everything is cooked over low heat for 45 minutes. If you see that the sauce is evaporating, add a little more water to prevent it from drying out. After 40 minutes of cooking, let it finish preparing without the lid.
- Your stewed meat with tomato is ready! Some people prefer to remove the tomato and vegetable mixture to mash it and form a sauce, another option that you can consider when serving this rich and complete dish.
